Grilled Avocado with Salsa

Ingredients:

  • 4 avocados
  • 1/4 c. olive oil
  • Salt and pepper
  • 1/2 c. corn and bean salsa, store bought or homemade
  • Hot sauce for garnish

Directions:

  1. Preheat grill to medium or 425 degrees.
  2. Brush the inside of the avocado halves with the olive oil. Place the avocado halves, cut side down, on the grill for 1 minute and 30 seconds. Turn the avocado halves 90 degrees to get the cross grill marks and cook for another 1 minute and 30 seconds.
  3. Remove from the grill and season with salt and pepper. Put a heaping tablespoon of salsa in the center well of each avocado half. Garnish with hot sauce and serve.

Pineapple Punch

Ingredients:

  • Assorted frozen fruit
  • (1) 12-oz can frozen pineapple juice concentrate (thawed)
  • (1) 6-oz can frozen limeade concentrate (thawed)
  • 4.5 c. cold water
  • 1 liter of club soda
  • Fresh mint for garnish

Directions:

  1. Pour the thawed pineapple and limeade concentrate into a large pitcher.
  2. Add cold water and most of the club soda, reserving about 1/3 cup.
  3. Stir to combine and chill until cold.
  4. Add ice cubes and frozen fruits to serving glasses and pour chilled punch.
  5. Garnish as desired and top glasses with the remaining club soda for an extra pop of fizz!
