Grilled Avocado with Salsa
Ingredients:
- 4 avocados
- 1/4 c. olive oil
- Salt and pepper
- 1/2 c. corn and bean salsa, store bought or homemade
- Hot sauce for garnish
Directions:
- Preheat grill to medium or 425 degrees.
- Brush the inside of the avocado halves with the olive oil. Place the avocado halves, cut side down, on the grill for 1 minute and 30 seconds. Turn the avocado halves 90 degrees to get the cross grill marks and cook for another 1 minute and 30 seconds.
- Remove from the grill and season with salt and pepper. Put a heaping tablespoon of salsa in the center well of each avocado half. Garnish with hot sauce and serve.

Pineapple Punch
Ingredients:
- Assorted frozen fruit
- (1) 12-oz can frozen pineapple juice concentrate (thawed)
- (1) 6-oz can frozen limeade concentrate (thawed)
- 4.5 c. cold water
- 1 liter of club soda
- Fresh mint for garnish
Directions:
- Pour the thawed pineapple and limeade concentrate into a large pitcher.
- Add cold water and most of the club soda, reserving about 1/3 cup.
- Stir to combine and chill until cold.
- Add ice cubes and frozen fruits to serving glasses and pour chilled punch.
- Garnish as desired and top glasses with the remaining club soda for an extra pop of fizz!
